Peach and Blueberry Crumble…

Rainy July days and heavy grey skies have me craving sweet comfort food ! I love these little doughnut peaches from Lidl so I decided to use them in a comforting crumble recipe for dessert!

 I used the same one I always make for my apple crumble just switching the apple filling to peaches and blueberries. This summer fruit recipe here is also lovely if you want to use other any other berries.

Ingredients
Crumble topping:
140g or 1 cup of oat flour or your normal choice of plain flour /gluten free brand etc
85g or 3/4 cup of light brown sugar 
4 ozs or 125g of butter or margarine
Filling
6 peaches
1/2 cup of blueberries
1 tbsp of lemon juice
2 tbsp of castor sugar
To make the crumble topping:
 Place the flour, sugar and butter together in a bowl. Combine with your fingers until the mixture begins to resemble large breadcrumbs.
Fill a saucepan half full with water and simmer the peaches and blueberries together with the sugar and lemon juice on the stove top until just soft.
Transfer to a buttered baking dish. add crumble topping and bake in a 180oc oven until it is golden brown.

Serve with your favourite toppings – I love coconut cream with a drizzle of maple syrup or just plain good old fashioned custard is fab with crumbles! The great thing about these is that you can have the topping made well in advance, ready to go with your fruit mixture! An easy dessert for summer dinners:)
