Cinnamon, Apple and Pear Traybake…..

I love traybakes as they are easy enough to make and good for feeding a crowd:) I made a version of this one before which I originally adapted from an old Woman and Home magazine and I have tweaked it again here using different flour. I like the mix and flavour so I thought I would share, as it is a great recipe to have on standby for weekend baking.
Cake
1 tsp cinnamon
125g flour ( I used doves farm gluten free plain flour)
125g diced butter
7ozs sugar
2 large eggs
100mls milk( I used dairy free almond milk)
125g oats
3-4 medium apples sliced
1 tin pears drained
Topping
85g plain flour
50g butter
2 oz sugar
1/2 tsp cinnamon
Mix the flour, ginger, cinnamon, oats and sugar in a bowl-add in the diced butter and blend until mixture becomes crumbly. Whisk the eggs and milk in a jug and add to the bowl … combine the mixture until you have a smooth batter. Place in a greased baking tray( mine is an 8×12 in tin) and top with the sliced apples and pears. Bake in a warmed 180c oven for 15 mins.
Make the crumble topping in a separate bowl by mixing flour, sugar and cinnamon together-add in the butter and rub with your fingers until the mixture resembles fine breadcrumbs. Remove the cake from oven and spread the crumble evenly over the top. Return to the oven for 25 mins until golden brown and fruit is bubbling.. 
Remove and leave to cool in the tray before cutting into squares.
I love mine topped with a little almond soy yoghurt, but cream or custard would also be delish!
