Oat Flour Banana Bread….

A few very over-ripe bananas prompted me to make this delicious banana bread earlier today and I decided to try it with some oat flour for a change. I already made pancakes with this flour and they tasted lovely so I was interested to see if it would work for this recipe also:)
I’m sure lots of people have their own special recipes for banana bread but I adapted mine from this one from here-adding the honey and coconut milk instead of the suggested Greek yogurt 
Ingredients
1 3/4 cups of oat flour
1/2 cup of light brown sugar
1 tsp of honey
1 tbsp coconut milk
1/2 cup of melted butter (I used pure dairy free brand)
1 tsp baking powder
2 large eggs
3 large overripe bananas mashed
Directions
Blend the butter and sugar together, then add in the eggs, honey, coconut milk and mashed bananas. Mix in the oat flour and baking powder and whizz until the mixture is well combined.
Pour the batter into a well greased 2lb loaf tin and bake in a hot 180oc for 50mins or until an inserted  skewer comes out clean.
It is delicious plain or eaten with some extra butter melting into it whilst still warm, which is exactly how I had mine as I couldn’t wait for it to cool and I also took advantage of a brief glimmer of late afternoon sunshine to eat it outside on the patio with a cup of tea:)
